In Australia, Lark is busy crafting whisky. The distillery has unveiled an all-new lineup of four single malt whiskies, complete with a brand-new bottle. Here they are.
Australia’s Lark Distilling Co. Ltd. is elevating its whisky range with a completely redesigned bottle and no fewer than four Australian single malt whiskies. We’ve listed all four below, along with their tasting notes.

What are the four new Lark single malt whiskies?

The four Australian single malts Lark has unveiled are listed below:
  • Fire Trail
  • Devil’s Storm
  • Ruby’s Abyss
  • Cinder Forest

What is Lark No. 151 Fire Trail whisky?

Lark No. 151 Fire Trail is a non-peated single malt whisky matured in Australian PX (Pedro Ximénez), Apera (Sherry), and Muscadelle casks. It’s then finished in ex-Bourbon and American oak wine casks and bottled at 41.5% alcohol by volume (ABV).
  • Nose: Baked pears with caramel, vibrant citrus, and a subtle touch of cedarwood.
  • Palate: Chocolate ganache over stewed mulberries, layered with vanilla custard and apricot compote.
  • Finish: Dark cacao-dusted hazelnuts and creamy coconut, with raisins melding into bush honey.

What is Lark No. 183 Devil’s Storm?

The next single malt is peated. Lark No. 183 Devil’s Storm matured in Seppeltsfield Tawny Port casks (some over 100 years old), complemented by Australian PX, Apera Sherry, and Muscadelle casks. After a finish in ex-Bourbon and American oak wine casks, it’s bottled at 42% ABV.
  • Nose: Notes of stewed plums with wildflower honey, scorched orange, and roasted pecans with cacao.
  • Palate: Dark chocolate over blackberries, balanced by caramel fondant and charred peaches with a hint of peat smoke.
  • Finish: Aged oak deepens into burnt maple syrup, with sticky toffee pudding and roasted sesame brittle that linger.

What is Lark No. 285 Ruby’s Abyss whisky?

Ruby’s Abyss is the first release in Lark’s Super Luxury range. This peated single malt is bottled at 43.8% ABV after maturing in Seppeltsfield casks that once held Tawny Port. Australian PX, Apera Sherry, and Muscadelle casks were also used.
  • Nose: Pears soaked in dessert wine, amber raisins, caramelized Demerara sugar, and a hint of salted macadamia.
  • Palate: Rich plum jam woven with chocolate sauce, buttery croissant layers, and earthy peat.
  • Finish: Warm tones of fortified oak with spiced golden syrup, candied quince, and umami for velvety depth.

What is Lark No. 168 Cinder Forest?

Cinder Forest is available exclusively through Global Travel Retail at major international airports. The whisky matured in first-fill Seppeltsfield Tawny Port casks, Australian PX, Apera Sherry, and Muscadelle casks. It was then finished in ex-Bourbon and American oak wine casks.
  • Nose: Aromas of poached nectarines with acacia honey, roasted almonds, and a hint of sugared lemon crêpes.
  • Palate: Berry reduction folded into chocolate, brûléed vanilla custard, and buttery shortbread.
  • Finish: Nougat with espresso in clotted cream, followed by a long-lingering jam of spiced dates.

Global launch of Lark’s luxury whiskies

The first three bottlings mark the starting point for the global rollout of this luxury portfolio. Cinder Forest will be available exclusively through Global Travel Retail. With these releases, Lark cements its position as a leading producer of premium Australian single malt whisky. Pricing and exact availability have yet to be announced.
