Whisky can be beastly delicious, Ross Archer and Russel Spratley take that quite literally. The owners of independent bottler Spiritfilled are the minds behind the Mythical Beasts series. The duo releases iconic whiskies, each themed around its own mythological creature. Today we meet The Phoenix, the beast of the Lowlands.
The Phoenix, known in Dutch as de feniks, is a mythological creature that carries deep meaning for many. It’s far more than a legendary bird rising from its own ashes. For thousands of years, the phoenix has symbolized hope, resilience, and the chance to begin anew after adversity.
That makes it one of history’s most recognizable and beloved mythical beings and a perfect fit for the Lowlands.

A symbol across many cultures

According to legend, the phoenix traces its origins to ancient Egypt, where tales told of the sacred Bennu bird associated with the sun god Ra. Through the Greek historian Herodotus, the myth spread across the world and into Roman times. Though the details shift from culture to culture, the heart of the story remains much the same.
When the phoenix reaches the end of its life, it goes up in flames. From the ashes, a new phoenix is born, stronger and younger than before. It’s precisely this power of constant rebirth that has made the phoenix such a potent symbol through the ages. It stands for recovery after loss, growth after hardship, and the idea that an ending doesn’t have to be final. It’s no coincidence the phoenix still appears in literature, art, and, as today, in whisky.

The 5 mythological monsters of Mythical Beasts

Each bottling in the Mythical Beasts series represents a Scotch whisky region. Later, an English edition was added as well. Islay’s whiskies feature the Chinese dragon-horse Qilin. The sea serpent Nyami Nyami adorns the bottles from Speyside, and the forest nymph Dryad belongs to the Highlands.
The Phoenix we’re discussing today spreads its wings over whiskies from the Lowlands. So far, there’s only been one: a 24-year-old Port Dundas. The youngest member of this mythic menagerie is the Stratford Lyon: a lion crowned with antlers that embodies the brand’s English whiskies.
