Fielden Hazybower, a whisky tribute to wildflowers
The new Hazybower release from Fielden Whisky is the second in the Fieldnotes series. The whisky follows the Hedgerow whisky that was released last year.
Whisky maker Chico Rosa explains that the wild plants that inspired the whisky serve several functions:
‘These plants are not just beautiful – they enrich the soil and add complexity to the whisky.’
- Chico RosaHazybower is distilled from a blend of heritage rye, wheat, and barley. They've all been grown according to Maslin Farming, an organic way of cultivating crops on Fielden's grain fields. No chemicals were used in the whole process from grain to glass, and clover was used as a natural fertilizer.
The distillation of the spirit took place in both column and pot stills, after which the new make matured in American oak casks and Hungarian Tokaji barrels.

- Nose: rich notes of citrus, blossom, custard, freshly baked scones, green herbs
- Palate: Lemon tart with cream, toasted nuts, honey, and sorrel (a plant).
- Finish: A mix of peppercorns, ginger, and spices.
