From a rejected whisky project to Forbidden Fruit

In 2018, Scotland’s Glen Moray distillery released a “whisky” that had matured in apple cider casks. The bottles were rejected by the Scotch Whisky Association and had to be pulled from shelves almost immediately. Under the rules, whisky is not allowed to mature in apple cider casks.
The distillery didn’t give up on the apple-cider idea and kept experimenting. In time, they found a loophole that captured an apple note while staying within the rules: Calvados casks.

The new Glen Moray Forbidden Fruit is a bona fide single malt whisky. It spent three years finishing in these casks, after the spirit destined for the single malt had matured for five years in bourbon barrels.
The result is a Speyside whisky fully approved by the SWA, with a distinctive fruity character and orchard fruit at its core.
