A series of whiskies where everything happens on Islay itself, from harvesting to bottling.
The new Kilchoman single malt whisky has been distilled from multiple barley harvests, specifically those from 2011, 2012, and 2012. This barley forms the basis for the whisky that is ultimately matured in the casks.
Anthony Wills, founder of Kilchoman Distillery, selected a whopping 16 first fill Oloroso sherry butts for the whisky, which he had been keeping an eye on for some time. Now he found the time right to bottle the whisky inside the casks.
‘I had had my eye on these casks for some time. You just know when the moment is right for bottling.’
