In the Wolfburn Distillery in Thurso, all kinds of casks are quietly maturing. While many of these casks follow a clear flavor plan, every now and then an opportunity comes along that the team simply can’t pass up.
Mid-2024 the distillery had the chance to acquire a handful of top-quality Cognac casks—French Limousin oak. They knew these called for something out of the ordinary.
The warehouses were combed for the perfect match. The choice landed on a Wolfburn whisky that had already spent seven years in first-fill ex-bourbon casks. It was then finished for six months in the Cognac casks to impart a unique twist.
The result marks a first for Wolfburn and, in the distillery’s own words, “a symphony of luxurious flavors.”

The Wolfburn 8 Years Old Cognac Cask Finish Whisky comes in a rustic-looking carton. The box features green and brown tones in a pattern that evokes a forest or an old, long forgotten copper pot still.

A floral potpourri with coffee and nutty tones

Wolfburn’s single malt is very inviting on the nose. First up are notes of sweet caramel and spice, quickly giving way to a floral potpourri alongside a subtle hint of freshly brewed filter coffee.
Supporting that is the telltale scent of vanilla pods and the trail mix aroma of raisins and nuts. It’s an enticing bouquet that draws you in to explore further.

Warm cola gummies with spice loaf

On the palate, the Wolfburn Cognac Cask is gentle and smooth. It opens with baking spices reminiscent of spice loaf, followed by apricots, mandarin peel, and other fruits.
Eventually you get the flavor of warm cola gummies, with a flicker of pepper in the background, alongside vanilla. The whisky carries a well-balanced, sweet profile with a pleasing sense of complexity.
Toward the finish the pepper note intensifies slightly, and the whole gently fades into a medium-length finish.
A malty note lingers for a moment, leaving a pleasing mouthfeel in its wake.
