The Dalmore has added a brand-new single malt to its Principal Collection. With The Dalmore 17 Year Old
single malt whisky, the maker once again showcases how sherry cask maturation enriches the spirit’s flavor.
For this 17-year-old single malt,
The Dalmore crafted a special maturation profile. After distillation, the whisky first rested in American white oak ex-bourbon casks, giving the spirit a gentle foundation with notes of vanilla and honey. Building on that base, the flavor profile was broadened through a triple sherry-cask finish.
The power of 3 old sherry casks
The distillery used Amoroso, Apostoles, and Matusalem Oloroso casks. Each cask brings its own dimension to the whisky, according to the distillery, creating a rich and layered single malt.
The Apostoles casks add structure, depth, and a savory complexity to the spirit. The Amoroso casks bridge sweet and savory notes, delivering a beautiful balance to the whisky.
The final cask, Matusalem Oloroso, imparts rounded tones and a lingering sweetness. These casks come from the renowned González Byass and previously held long-aged sherry from Spanish bodegas. The character of that sherry ultimately shines through in the whisky.

- Nose: Notes of Seville orange, orchard fruits, and a hint of wood spice.
- Palate: Poached pear, blueberries, sweet toffee, and orange marmalade, leading into orange and chocolate toward the finish.
- Finish: Dark chocolate with orange, rich dried fruits, and subtle hints of cinnamon and nutmeg.
The whisky is bottled at 42% alcohol by volume (ABV).
