The Dalmore is now launching the third edition of the Cask Curation series, featuring special cask maturations each time. This time, Richard Paterson OBE, Master Blender at The Dalmore, has focused on red wine casks from the Rhône region in France.

A new whisky series born out of a passion for wine

The single malt whiskies in the new series come from well-known wineries including Château Mont-Redon. Each of the three whiskies in this set has undergone a full maturation in casks from the winery and a finish in red wine casks.

Paterson is extremely pleased with the new release. He shares how interesting it is to see what the casks from the French winery have done to the Scottish whisky.

What are the tasting notes of the The Dalmore Cask Curation Series 3 whiskies?

The three bottles also come with a flavour profile. Below we list them for each whisky, along with its alcohol per volume (ABV).

Dalmore 24 Year Old (40.7% ABV)

Nose: Honey, sweet citrus, orchard fruit, and delicate spices.
Palate: Red berries, crème brûlée, orange peel, and dark toffee.
Finish: Toffee, tangerine, lightly roasted coffee and exotic spices.

Dalmore 34 Year Old (40.5% ABV)

Nose: Floral, forest fruits, vanilla, Seville orange, and wood spices.
Palate: Dark berries, stone fruits, vanilla, and soft wood spices.
Finish: Warm honey, white chocolate, wood spices, and a hint of liquorice.

Dalmore 43 Year Old (40.3% ABV)

Nose: Dried fruit, orange marmalade, manuka honey and antique leather.
Palate: Forest fruits, dark chocolate, honey mango and warming spices.
Finish: Dark fruit, cocoa, espresso and aged wood.
