Japan has unveiled an exciting new whisky with a distinctive maturation story. Yamazaki has revealed its new Refill Spanish Oak. This Japanese single malt is all about Spanish oak casks that have previously held whisky. But what makes this new Japanese whisky so special?
The new Yamazaki Refill Spanish Oak shows just how much character a used cask can bring to a whisky. In fact, Spanish oak casks have played an important role at Yamazaki since 1923, when founder Shinjiro Torii chose this type of wood to mature Japanese single malt whisky.
More than 100 years later, the Yamazaki distillery still uses Spanish oak casks. For this whisky, however, it has deliberately taken a different approach. While whisky is normally matured in first-fill casks, that isn’t the case here. Yamazaki Refill Spanish Oak is drawn from refill casks.
A refill cask is one that has already been used to mature whisky. As a result, the wood generally has a subtler influence on the spirit during subsequent maturation. That doesn’t mean the cask has nothing left to offer. On the contrary, Yamazaki says it helps create more delicate flavours.

Why does Yamazaki use used Spanish oak casks?

A refill cask often lends a gentler influence, giving the whisky’s original character more room to shine. That’s exactly what Yamazaki is aiming for. With this release, the distillery wants to show that Spanish oak casks still have plenty to offer after their first use.
The brand also draws on the Japanese concept of wabi-sabi, which includes an appreciation of beauty that changes over time. Yamazaki sees a natural connection with casks that develop a different character after years of use. The concept of monozukuri also plays a part. This Japanese term refers to craftsmanship and the continuous pursuit of improvement.
