Beautiful things have been happening in Australia lately. LARK Distillery has unveiled some stunning whiskies, an underground warehouse is in the works, and now Hellyers Road is introducing something new: a 20-year-old single malt single cask whisky with a strikingly fruity profile.
The longer you let whisky mature, the more complexity and depth it tends to develop. At Hellyers Road in Tasmania, a cask has just yielded a whisky with a standout character: Hellyers Road Single Cask 4253.04, a whisky that tastes like a bowl of fruit.

What is the Hellyers Road Single Cask 4253.04 whisky?

The new release from the Tasmanian distillery was distilled on September 9, 2004, alongside spirit destined for other casks. Twenty years later, this whisky is the only one from that batch that remains. The rest was bottled between 2014 and 2020.
The cask used for this whisky is an American oak ex-bourbon barrel. Thanks to the cask and Tasmania’s cool climate, the whisky has developed a beautiful balance between fruit and oak. Head Distiller Fiona Coutts personally selected this cask after instantly recognizing, on first taste, that it was a Single Cask of exceptional quality.

What does the Hellyers Road single cask whisky taste like?

According to Coutts, the whisky carries the Tasmanian distillery’s signature in the nose, palate, and finish, delivering a fully fruit-driven experience. The tasting notes are as follows:
  • Nose: Elegant floral tones lead the aroma, followed by ripe peach and nectarine. Warm hints of freshly baked baklava and delicate orange blossom add depth and sweetness.

  • Sweet stone fruits take center stage, supported by gentle nuttiness and grilled, caramelized pineapple. A few drops of water reveal a creamy note reminiscent of buttery Anzac biscuits. The balance is exquisitely refined.
  • Finish: Long and lingering, with an elegant echo of stone fruits that resonates for minutes.

The Hellyers Road whisky is extremely limited and available via the distillery’s website. The price is 1,150 Australian dollars. In Australia, it is also available at specialist whisky retailers and bottle shops.
