Zuidam Distillers has reached a remarkable milestone. The distillery behind Millstone Whisky turns 50 this year. And that calls for a special celebration: not just a single release, but an entire whisky series"the Millstone Mythology Series. Leading the charge is a colossal sea monster: the Leviathan.
Zuidam Distillers celebrates its 50th anniversary this year. In that half-century, the family-run company has grown into a renowned Dutch distillery, with Millstone as its flagship whisky brand. As such, Zuidam ranks among the pioneers of
Dutch whisky.
To mark the jubilee, Zuidam has selected several standout whiskies. These will appear within the new Millstone Mythology Series, with three releases planned for now. Leviathan opens the first chapter, to be followed by Pegasus and later this year, Chimera.
Millstone Mythology Chapter 1: Leviathan
For the time being, three whiskies are scheduled within the Mythology Series, with the possibility of additional special bottlings later on. All releases are bottled at natural cask strength and have spent their entire maturation in a single cask type. In other words, no finishes. The curtain rises with a sea monster: Leviathan.
Leviathan is a 12-year-old peated Millstone Dutch Single Malt Whisky, fully matured in seasoned Pedro Ximénez casks. Two PX butts were selected for this release.
The whisky is double distilled and made with heavily peated malt at 35 PPM, M-strain yeast, and Belgian brewer’s yeast. The tasting notes are as follows:
- Nose: Complex and strikingly fresh, with lime, lemon, rancio, menthol, and camphor. In the background: gentle peat smoke, chocolate, and dried fruits, beautifully integrated with the richness of the PX cask.
- Palate: Elegant and smoky, with orange and lemon peel, chocolate, and dried fruit, followed by subtle hints of camphor and menthol.
- Finish: Medium length, with delicate smokiness and chocolate.
The limited run proved highly sought-after: Leviathan sold out quickly at the distillery. You can still find it at select specialist retailers.
Chapter 2 Pegasus: Millstone Whisky from Amarone Casks
Chapter Two is named Pegasus and takes a completely different direction. Pegasus is a 9-year-old unpeated Millstone Single Malt, fully matured in exclusive Amarone casks.
Zuidam Distillers has previously released successful peated whiskies from this style of wine cask. Pegasus, however, will be the first unpeated Millstone Single Malt to be bottled after a full maturation in Amarone casks.
Once again, the whisky is double distilled with M-strain yeast and
Belgian brewer’s yeast, this time using unpeated distillers malt. Tasting notes have not yet been released. Pegasus will be bottled at a natural cask strength of 49.5%
alcohol by volume (ABV)
. Chapter 3 Chimera brings Millstone back to Oloroso
Zuidam Distillers has also slated Chapter 3: Chimera, planned for later this year. With Chimera, the Mythology Series returns to peated single malt. This whisky has been fully matured in Oloroso casks, a cask type that holds a special place within Millstone.
Each chapter in the Mythology Series thus carves out its own distinct personality: from peated whisky in PX for Leviathan, to unpeated Amarone maturation with Pegasus, then back to peated Oloroso with Chimera. Three different combinations of spirit and cask, brought together in one anniversary series.
