Welcome to another food pairing tip! This time, we’re making waffles, whisky waffles, to be precise!
This Whisky food & drinks whisky waffle recipe is really in two parts: the waffles and the (whisky) sauce to pour over them. You can go any direction with the waffles—you can even pick up ready-made ones. Supermarkets also sell packs of ready-to-eat waffles, but we’re taking the slightly more hands-on route. There are plenty of waffle recipes out there, but we found this one from Jumbo the simplest.

What you’ll need

  • 50 g unsalted butter
  • 175 g flour
  • 7 g instant yeast
  • 8 g vanilla sugar
  • 0.5 tbsp sunflower oil
  • 125 ml whole milk
  • 125 ml water
  • 1 egg
  • 1 waffle iron for 2 waffles
  • 1 pastry brush

Whisky food & drinks: How to make whisky waffles

Once you’ve got everything together, making waffles is pretty straightforward:
1. Pour the milk into a small saucepan and bring it to a boil. Careful: milk rises fast and can boil over in a flash! Add the butter and turn off the heat. Once the butter has melted, add the water.
2. Put the remaining ingredients—the flour, yeast, vanilla sugar, a pinch of salt, and the egg—into a large bowl. Add the milk mixture and whisk until smooth. Let the batter rest: cover it and set it in a warm spot for 45 minutes. Not in the fridge!
3. Now you’re ready to bake. Before you do, make the sauce below—but we’ll continue here with the waffles themselves. Preheat the waffle iron, lightly grease the plates, and pour in some batter. Close the iron; after about four minutes the waffles should be done. Repeat until all the batter is used.
With the waffles baked, you’re nearly there—but they’re not whisky waffles yet. The next step is key.

Whisky caramel sauce for the whisky waffles

Naturally, we’re most excited about the sauce that goes on top—that’s where the whisky comes in! We found this sauce at Foodies. Their waffle method is a bit more involved, but the sauce is wonderfully simple.
For the whisky caramel sauce, you’ll need:
  • 150 g sugar
  • 10 g butter
  • sea salt flakes
  • 125 ml heavy cream
  • 3 tbsp whisky
  • 2 tsp vanilla extract
With these ingredients, we’ll make a caramel.
1. Melt the sugar in a saucepan over medium heat.
2. Bring it to a gentle boil and cook until it turns a deep copper color. Note: stop in time or the caramel will harden too much.
3. Add the butter, then a pinch of sea salt flakes.
4. Now add the cream, vanilla extract, and whisky. After two minutes, your sauce is ready.
Time to bring it all together. Bake the waffles in the iron and drench them with the sauce as soon as they’re done. Want to finish it off in style? Crumble a few pecans over the top.

Which whisky?

The choice of whisky for these Whisky food & drinks whisky waffles is really up to you. The waffles and sauce are fairly sweet, so a whisky that isn’t too sweet or overly vanilla-driven will pair beautifully. A dram with a bit of bite can help amplify the sauce’s flavor.
