For the 2025 edition of its 21 Year Old Cask Strength, the Bunnahabhain distillery in Scotland has come up with something special. They’ve married their Islay spirit with sun-soaked influences from Jerez.
The whisky maker secured 21 carefully selected Pedro Ximénez casks, in which the cask strength whisky was finished for 21 months. Before that, the oily spirit had matured in ex-Oloroso casks.
The result, says distillery manager Andrew Brown, is a whisky rich in flavor.

How does the Bunnahabhain 21 Year Old Cask Strength 2025 Edition thrill your palate?
The distillery has provided extensive tasting notes for this cask strength Scotch. We’ve listed them below:
- Nose: Rich dried fruits, toffee and brown sugar, with hints of walnuts, leather and a whisper of maritime character.
- Palate: Sweet PX raisins, chocolate and cherries, followed by spiced oak, espresso, cinnamon and clove.
- Finish: Long and warming with notes of chocolate, plums and a touch of the coast.
The whisky is bottled at 53.1 percent alcohol by volume (ABV).
Where can you buy the Bunnahabhain 21 Year Old Cask Strength 2025 Edition?
This new release is limited. Only 2,568 bottles have been filled, available through the distillery’s website. The price per bottle is €322.95.

- Let's keep this factually correct. Pernod Ricard DID NOT release a Chinese whisky. Their first output from The Chuan (the name of the distillery in Sichuan, China) wasn't fit for bottling. What they actually bottled was imported Scotch whisky. This is why the product is called "PURE MALT" and not "Chinese Whisky" - because Pure Malt is not a regulated term - this is not a secret. This was exposed about a week after they released it. There were even videos about their own staff on site admitting it was made from imported whisky - which Pernod Ricard got the lawyers onto to get the video pulled.
