Sustainability and whisky go hand in hand more often than ever. The new Struie Distillery in Scotland will be the next eco-friendly distillery there is. The whiskymaker just secured a huge funding of 1.57 million pounds.
Struie Distillery isn’t just chasing a dream. It just raised up to 1.57 million pounds through crowdfunding. That’s roughly 2 million dollars. The campaign did exceptionally well: it quickly smashed its goal, landing at 129 percent of its original target.
Part of the backing comes from Highlands and Islands Enterprise, which is betting big on sustainable whisky production in Scotland. Not bad for a distillery that doesn’t even exist yet.

One step closer to sustainability goals

With the funding the Highlands-based distillery is one step closer to becoming one of the biggest carbon-neutral distilleries in the Scotland.
The planned distillery is designed to operate entirely on renewable energy. Proposed systems include solar arrays, thermal energy storage, and high-efficiency heat pumps. The project aims to demonstrate how Scotch whisky production can transition toward electrified, net-zero operations at scale.
Once completed, the distillery is expected to produce up to 400.000 liters of pure alcohol annually. This would represent a more than tenfold increase compared to the company’s current production capacity.

Distillery project led by experienced founders

The development is being led by brothers Phil Thompson and Simon Thompson. They previously founded Dornoch Distillery in 2017, a distillery known within the Scotch whisky sector for its small-scale, quality-focused releases. According to Simon Thompson, the project is intended to serve as a model for sustainable whisky production in Scotland, particularly through the use of electrified energy systems.
