In Scotland, The GlenAllachie has expanded its Masters of Wood Series with a new whisky just shy of 20 years old. This release is all about rare casks with a profound sherry influence.
The new Masters of Wood whisky from The GlenAllachie comes from some of the distillery’s most exceptional casks. For this whisky, ex-solera casks were used that previously held 55-year-old Pedro Ximénez and Oloroso sherry.
Billy Walker, the distillery’s master distiller, says the rarity of the casks elevates the whisky even further.

What exactly is The GlenAllachie 19-year-old Ex-Solera Sherry Cask Matured whisky?

The new Masters of Wood whisky is built around the most exceptional casks in The GlenAllachie’s inventory. For this second edition in the series, Walker selected these remarkable casks that bodegas rarely release.
Because of that, these casks developed deep sherry character over decades, layering dried fruits, spices, chocolate, and nutty depth. That character has now been imparted to the Speyside whisky from The GlenAllachie.
The spirit for this single malt first matured in American ex-bourbon barrels. It then underwent a secondary maturation in the rare ex-solera sherry casks. The combination yields notes of vanilla, caramel, and honey alongside rich PX sweetness and the drier, spicier influence of Oloroso.

What are the tasting notes for The GlenAllachie 19 Year Old?

  • Nose: Plums, intense mocha and honeycomb, with caramel snaps, molasses, and rich cocoa.
  • Palate: Plum syrup, treacle, and warm heather honey, followed by black cherries, mocha, orchard fruits, with crystallized cinnamon and ginger.
  • Finish: Long, rich, and velvety, with dark sherry notes, spices, cocoa, and lingering honeyed sweetness.
The whisky is bottled at 50% alcohol by volume (ABV).
