In Tasmania, the Year of the Fire Horse hasn’t passed LARK Distillery by. The distillery has unveiled a special edition devoted entirely to Lunar New Year: a limited edition single malt.
LARK Distillery’s new single malt whisky in honor of Lunar New Year is anything but ordinary. The expression features a fitting label and, of course, a great whisky.
What is the LARK 2026 Fire Horse Limited Edition whisky?
For the 2026 Fire Horse Limited Edition, LARK Distillery crafted a Tasmanian single malt matured in hand-selected first-fill sherry and port casks. This distinctive combination has imparted lush, sweet notes to the whisky.
The distillery then applied a finishing period in special Seppeltsfield Tawny casks, adding further depth and complexity to the flavor.
What does the LARK 2026 Fire Horse Limited Edition taste like?
According to the distillery, the whisky offers the following tasting notes:
- Nose: Gentle pear blossom with sweet, honeyed tea, rich caramel, and touches of roasted quince.
- Palate: Orange spice cake and apricot compote with juicy dried raisins, treacle pudding, and soft red dates.
- Finish: Hazelnut praline with candied fruit, a hint of new leather, and a whisper of Highland peat smoke.
A special package for the new year
The whisky is bottled in a special release featuring artwork created by Chris Yee. Both the label and the box are rich with symbolism. Flowing lines shape the Fire Horse, wood-grain textures nod to Cradle Mountain, and subtle flight paths across the night sky symbolize journey and reunion. The bottle exudes luxury, depth, and collectible appeal.

We have not spoken to the individuals in the video ourselves, nor can we verify who they are. We describe it as a Chinese whisky because it is released by a Chinese distillery. - Let's keep this factually correct. Pernod Ricard DID NOT release a Chinese whisky. Their first output from The Chuan (the name of the distillery in Sichuan, China) wasn't fit for bottling. What they actually bottled was imported Scotch whisky. This is why the product is called "PURE MALT" and not "Chinese Whisky" - because Pure Malt is not a regulated term - this is not a secret. This was exposed about a week after they released it. There were even videos about their own staff on site admitting it was made from imported whisky - which Pernod Ricard got the lawyers onto to get the video pulled.
