Eden Mill Nods to the Past With this Special-edition Whisky

Eden Mill Distillery has unveiled its annual special edition. The Art of St Andrews 2025 Single Malt tips its hat to the distillery’s earliest days. It refers to a special drink for the distillery: beer.

Before Eden Mill became a distillery, they were already making drinks. Not whisky at the time, but a beer called The Clock. Brewed with Brown Crystal Malt, it immediately struck a chord with drinkers.

To celebrate that success, this year’s Eden Mill special edition whisky pays tribute to The Clock beer.

What is the Eden Mill The Art of St Andrews whisky?

In 2018, Head Distiller Scott Ferguson set out to capture that distinctive flavor profile in a whisky. He distilled a spirit using Brown Crystal malt and laid it down in first-fill bourbon casks.

The whisky matured there until earlier this year, when it was transferred into Amontillado sherry casks for a finishing period. The result is a whisky with a refined, nutty character.

The whisky’s tasting notes reveal a richly layered profile. Below we give you the tasting notes the distillery shared with us:

Nose: warm aromas of toasted biscuit, malty sweetness, and freshly baked bread.
Palate: full and creamy layers of nutty sherry, with flavors reminiscent of almond frangipane.
Finish: elegant and refined, with a cherry-like sweetness and a subtle spicy tail.

The whisky comes in a special presentation box designed by local artist Deborah Philips, who drew inspiration for the floral artwork from the distillery’s past.
