Australia’s LARK Distillery has bottled a brand-new single malt drawn from rare casks. The LARK Rare Cask Para Vintage boasts a rich, complex character thanks to mature tawny port casks.

In Australia, LARK Distillery has been hitting the gas on whisky releases. Not long ago the distillery unveiled several new whiskies, and now it’s time for the next Tasmanian single malt. This time, the whisky comes from rare tawny port casks that have delivered a deep and layered profile.

What is the LARK Rare Cask Para Vintage whisky?

The new LARK whisky marries triple maturation with an exclusive finish. The spirit for this single malt first matured in first-fill tawny, apera, and bourbon casks. The exact length of this maturation is undisclosed.

It then received a finishing period in rare 1992 Para Vintage Tawny casks from Seppeltsfield Wines. These final casks were selected by the distillery for their intensity.

Thanks to this finish, the LARK whisky gains even greater depth and complexity, with pronounced notes echoing the famed winemaker’s fortified wine.

Tasting notes – Rare Cask Para Vintage

According to the distillery, the LARK Rare Cask Para Vintage whisky offers the following tasting notes:

Nose: Oolong tea and Tasmanian peat intertwine with raspberry panna cotta and toasted almonds, followed by hints of old parchment and cigar leaf.
Palate: Floral, smoky orange peel gives way to spiced blackberry tart, wildflower honey, and cacao nibs.
Finish: Deep, mossy peat and roasted malt linger, carried by a lasting, resinous sweetness of fortified oak.

The whisky is bottled at 46.5% alcohol by volume (ABV).

Limited and exclusive

The LARK Rare Cask Para Vintage release is limited to 920 bottles. A 700 ml bottle is priced at 500 Australian dollars. It’s available via the LARK Distillery webshop. Whether it will see a global release has not been announced.
